Chocolate Peanut Butter Pie
Hey friends! We are back for another month of Coffee and Pie Chat. And since it falls on the same date as my weekly field notes updates, I am combining the two this week. I will be back next week with a full length field notes. This month, Daenel, over at Living Outside the Stacks, and I decided on a Chocolate Peanut Butter Pie for August. This pie can be made year round since it doesn’t use any real seasonal ingredients, but I thought it was the perfect pie to perfect before Labor Day celebrations! Plus I’ve wanted to make this pie for a long time now.
Before we get to the actual recipe, let’s chat for a second, shall we? I wanted to give you a quick rundown on what’s been happening this past week. First, we filmed the first two episodes of Life on the Farmstead (with the Chicken Librarian). Those episodes are in post production and will then either be given the green light (as in we are officially good to go to actually film the series) or it will not be picked up. I feel good about it but won’t know anything until next week. You can catch me on Living East Tennessee this morning as I share details about the show and also a little easy craft that viewers can make!
I had my first brand ambassador gig this past week. I was selected for the Statemint West Knoxville consignment sale. What a treat! You know how much I love to thrift for everything, clothes included. It is really one of the most sustainable things we can do. I look for higher end brands and stick to my style. I will add new styles in if I think I can incorporate it into my style. I stay away from major trends or things that do not look good on my body shape/type. Anyway, I had such a good time shopping this consignment sale. It’s going on this weekend in Knoxville, if you happen to be local I highly suggest you add it to your to-do list for the weekend. Sunday is half off day too! You might see me there taking a second look at some things I left behind.

Chocolate Peanut Butter Pie
Chocolate Peanut Butter Pie
Perfect for potlucks, long weekends, or just because. This pie is as easy as it is indulgent.
Ingredients:
For the crust:
14 whole (196 grams) chocolate graham crackers
1 tablespoon light brown sugar
7 tablespoons (99 grams) unsalted butter, melted
For the filling:
8 ounces (227 grams) cream cheese, at room temperature
3/4 cup (94 grams) powdered sugar plus 2 tablespoons, divided
1 cup (270 grams) creamy conventional peanut butter
1 cup (240 grams) heavy whipping cream
1 teaspoon vanilla extract
For the topping:
Melted peanut butter
Melted chocolate
Mini Reese’s cups
Chocolate chips
Instructions:
For the crust:
Preheat the oven to 325°F.
In the bowl of a food processor, process the crackers and sugar until finely ground. Add the butter and pulse until moistened. Use the bottom of a measuring cup, glass, or ramekin to press the crust mixture into the bottom and up the sides of a 9-inch pie plate. Bake until fragrant, about 10 to 12 minutes. Cool completely on a wire rack.
For the filling:
In a large bowl, use an electric mixer to beat the cream cheese, 3/4 cup powdered sugar, and the peanut butter until light and fluffy, about 3 minutes.
In a separate bowl, use an electric mixer with the whisk attachment to whip the heavy cream until thick and light. Add in the remaining 2 tablespoons of powdered sugar and the vanilla extract and continue to whip until stiff peaks form.
Gently fold the whipped cream into the peanut butter mixture. Pour into the prepared pie shell and freeze for 3 hours or chill in the fridge at least 6 hours.
Melt some chocolate and peanut butter, either together or separately, and then drizzle over the top of the pie. Top with mini Reese's cups and peanut butter chips. Serve frozen or refrigerated.
Store in the fridge, covered, for up to 3 days, or in the freezer for up to 1 month.
