Farmstead Granola Recipe
Hey friends! I have this super yummy and super easy granola recipe for you. It is hands-down my favorite. I love Purely Elizabeth’s original granola recipe but I hate buying something that I can make myself. So I went on a search to find a copycat recipe and this is the one I found. And I use it over and over again. I call it my “Farmstead Granola”. If you are a newsletter subscriber, you will have already received this recipe in my newsletter from last week. I used honey for this recipe. I typically would use maple syrup because I used to make my own but since moving to East TN I haven’t quite figured out maple syrup season! It’s a much shorter season here and it is on my list of things to figure out this winter. Anyway, here’s the recipe. I hope you make it and like it! Let me know if you do!

Farmstead Granola
Super yummy, super easy, and easy to take on the go!
Ingredients:
1 tbsp chia seeds + 2 tbsp water
1/3 cup coconut oil
1/4 cup brown sugar
3 tbsp maple syrup or honey
1 tsp vanilla
1 1/2 cup oats
1’/2 cup uncooked quinoa
3 tbsp chia seeds, addition to above seeds
1/4 cup flaxseed
Cinnamon
Directions:
Make 1 tbsp chia seeds with water and set aside to thicken.
Heat coconut oil, sugar, maple syrup/honey, and vanilla over the stove until fully melted.
Combine oats and quinoa in a large bowl. Blend half of the mixture until it reaches a flour consistency, then add back to the bowl.
Pour oil mixture into the bowl and stir to combine. Add 3 tbsp chia seeds, flaxseed, and chia mixture and continue to mix until fully incorporated.
Spread mixture completely flat on a large baking tray (important: you want it to cook evenly). Bake at 300 for 30-40 minutes, shaking every 10 minutes.
Let cool completely and break into large clusters! Store in an airtight container for up to 1 week. Freezes really well too!
